What's for Supper?

Hey Friends,

Today is Saturday and it's just about too quiet. I've already delivered tomatoes to a friend and parent, now I'm back home.

Tater soup is on the menu this evening. Kinda hot for soup, but I had some potatoes that needed using before they went bad, sooooo.



I begin my soup with water and sliced onion






I let the sliced onion simmer for at least an hour





I add a good measure of garlic power
When the water turns kind of amber colored I know I've got enough garlic powder




I add salt and pepper to my onion/garlic broth





Of course wash, peel and cube your potatoes.

Depends on how many people you're going to feed, but for two I usually peel about 4 or 5 potatoes. If you have soup leftover, that's okay. Heat it up the next day for a quick easy lunch.




I let my broth cook down in volume before I add my potatoes. My personal
preference is for a thicker, creamier soup.





Add just a bit of milk, just enough to give the soup some color




Next add butter or margarine
I use real butter, just because it adds flavor, about 4 Tablespoons





My last ingredient is cream of mushroom soup. It adds flavor and the creamy texture I love.



At the end, you should have a good, creamy cup of soup.

None of the brands in the pictures on my blog are an endorsement of any product. I use generic brands as well as name brands when I cook. Most of the time it's generic due to cost. Name brand products don't get to rub labels with my generics very often.
